These lobster cakes are all about the sweet Maine lobster. With a touch of shallots, Dijon mustard, scallions, and Panko breadcrumbs to hold them together, it’s the large pieces of lobster that shine. Delicate and light, but full of flavor, they’re certain to delight any lobster lover. Choose from four or eight 4 oz. lobster cakes; each lobster cake serves one.
Bake from frozen.
Preheat the oven to 375°F. Brush the tops of the Lobster Cakes with a thin layer of mayonnaise or a little bit of melted butter. Spray a cookie sheet with a thin layer of non-stick cooking spray. Bake the Lobster Cakes for approximately 27-32 minutes or until they are golden brown and bubbly on top. For an extra crispy Lobster Cake, turn on the broiler for the last two minutes of baking.
