Our Madeleine Sampler honors that culinary tradition with a modern twist, baked in a classic heart shape rather than the original shell. The madeleine's story begins in 18th-century Commercy, in France's Lorraine region, where legend credits a young servant girl named Madeleine Paulmier with baking a batch of small shell-shaped cakes for an exiled king.  He was so taken with them that he named the treat after her, and the delicate little dessert cakes soon became a fixture of French pastry cases and tea tables alike. 

Nearly two centuries later, the madeleine found a second kind of fame when Marcel Proust wrote of a single bite dipped in tea unlocking a flood of childhood memory — a fitting legacy for a cake this small to have inspired something so lasting.
