Spinach Gruyere Crêpe Gateau

This savory crepe cake is a work of genius. It features a seemingly endless stack of delicate layers of thin french crepes, each layered with the classic flavors of aged Gruyere cheese, tender onions, and spinach. This is rich, soul-satisfying fare, and is an absolutely stunning masterpiece. Each savory crepe cake is 6" in diameter, and serves up to 8 as an entree or appetizer, and 10 as a side dish.

Thaw in the refrigerator overnight.
Remove from cardboard tray and place on a parchment paper-lined baking pan. Cover Gateau with foil. Bake at 350°F for 45-50 minutes or until warmed through. Remove foil and bake another 2-4 minutes. Must be heated to an internal temperature of 165°F.
