This is pure Mexican comfort food. Chicken and tortilla chips are cooked in a richly-flavored salsa verde and topped with queso fresco. With its flavors of chiles, cumin, lime, and cilantro, this is very versatile—top with avocado for a scrumptious brunch dish, or serve with tortillas and sour cream as a dinner entrée. A great example of south-of-the-border gourmet.

Preheat oven to 375⁰F. Remove plastic film from oven-safe tray and place tray on a foil lined baking sheet. Bake for 40-50 minutes or until internal temperature reaches 165⁰F.
