Thaw overnight under refrigeration prior to cooking.
Conventional Oven: Preheat oven to 425°F. Roast uncovered in the oven for approximately 30-40 minutes or until the internal temperature reads 130°F. Let rest for 5-10 minutes prior to serving. Final internal temperature will rise to 145°F which is medium rare. Serves 6-8. Pan searing roast before you put in oven is recommended.
Grilling Instructions: Preheat grill. (High heat for gas grill). Season roast with cracked pepper and salt. Place roast on grill and sear on high for 6-8 minutes, turn roast every 4-6 minutes until all sides are seared. Reduce grill heat to medium, continue cooking another 30-35 minutes until desired degree of doneness is reached.
