Completely thaw under refrigeration 48 hours prior to cooking. Preheat the oven to 350°F. Season the roast with salt, pepper, garlic powder, and olive oil. Place the roast in the center of the roasting pan. Bake approximately 2 hours or until the internal temperature is 140°F. Once cooked remove from the oven and let in rest for approximately 15 minutes. Slice and enjoy.
