Here at Mackenzie, we honor the men and women who have served our country and believe spending time with family and friends is priceless. Both owners of the company have fathers who served in the military, and for us, their bravery and courage was a legacy we value.
With busy schedules and family time hard to come by, Memorial Day is a great way to spend time off with the ones you love. Entertaining should include an easy menu and entrees that can be grilled to give you more time to spend outdoors enjoying the warmth of the sun.
One of our most popular appetizers is our Crab Dip. Inspired by our own family recipes, our crab dip mixes lump and claw crab meat, cream cheese, sharp Cheddar cheese, and a unique blend of Chesapeake Bay seasonings.
We love our Watermelon Gazpacho as great summer entree or a nice chilled appetizer that can be served in martini glasses with a wedge of Watermelon or a sprig of mint leaves for a stylish presentation.
For an easy main course, try our succulent Cherry Cola Pork Ribs. Tender pork is marinated with a sweet blend of cherry cola, Dijon mustard, soy sauce, and cherry jam. The marinade contrasts with the salty taste of the pork, making these ribs a flavorful entree with meat that falls right off the bone. We created this recipe and had it made to our specifications, so we know you’ll love it as much as we do. Pair the ribs with corn on the cob and an easy tomato and cucumber salad for a quick but satisfying meal.
For the grand finale, we must sing the praises of our Strawberry Shortcake. Delicate layers of strawberry puree are spread between layers of moist cake and topped with a deliciously light whip cream icing that sets our Strawberry Shortcake apart from the rest. We promise this will be your go-to cake for entertaining this summer, it’s that delicious!

Laura's Crab Dip Recipe:
1 pound jumbo lump crabmeat
1 pound cream cheese
1/3 - 1/2 cup mayonnaise
1/4 cup shredded cheddar cheese
1 medium onion, finely diced
1 tsp. horseradish
Old Bay seasoning to taste (start with 1 tsp and increase to your liking)
Preheat oven to 375 F. Bring cream cheese to room temperature and combine in a small bowl with mayonnaise, cheddar cheese, onion, horseradish, and Old Bay. Add crabmeat and gently fold into the mixture trying to keep crabmeat pieces as in tact as possible. Once combined, place in a small oven safe baking dish and bake 35-45 minutes, until bubbly and golden brown.
