Authentic Blue Stilton, nearly 300 years old, is handmade exclusively in the counties of Leicestershire, Nottinghamshire, and Derbyshire. Only seven dairies, using the original centuries-old recipe, are licensed to produce Blue Stilton, this "King of Cheeses". So esteemed is Stilton's unique flavor and texture, it is the only British cheese with its own trademark. Serving tips: to bring true flavor of Stilton on a cheese board or for snacking, loosen the wrapping and allow the cheese to reach room temperature before serving. Try serving with a plum bread or a mango chutney. Full bodied or sweet wines complement Stiltons unique taste. Cooking tips: for a savory dip or salad dressing, crumble a few ounces of Stilton and with a fork mix in enough plain yogurt to give desired consistency. Add seasonings and lemon juice according to taste. Beat some Stilton with half its weight of butter, a little milk, pinch of mace and some sherry to a smooth paste. Press into individual pots, chill well and serve with crudites. Mix some Stilton with a little mayonnaise and a few halved, seeded grapes or some pineapple and use to fill a halved avocado pear.
