Pesto: Place one sealed pouch of pesto in a bowl of hot tap water. Set aside.
Pasta: In a large pot, bring 8 cups of lightly salted water (add 1/8 tsp salt) to a boil. Open one pouch of tortellini and pour into boiling water. Cook uncovered for 4-5 minutes. Drain and transfer the tortellini to a bowl.
Shrimp: While pasta is cooking, place raw shrimp from one pouch in a saute pan with 2 tsp oil, on medium heat. Cook for 2 minutes. Turn shrimp over and cook for an additional 1-2 minutes, until shrimp are opaque. Do not overcook. Remove and drain from pan. Add to the tortellini in the bowl. Remove the pesto pouch from the water. Cut open the pouch and immediately pour over the cooked shrimp and tortellini. Toss gently and serve.
