A true Scottish delicacy, Kippers are fresh herring smoked over smoldering oak chips. The result is a delicately flavored, thick, fleshy fish suitable for a breakfast or brunch treat, or a light supper. Delicious grilled, broiled or poached. Five pounds.

Kippers should reach room temperature before cooking. Rinse in running hot water.

Stove top: Lightly poach in boiling water until backbone lifts from the body. Remove the backbone together with the majority of small non-harmful bones.

Grill: Place on a preheated grill pan and cook under a medium to high heat for 10-12 minutes. Serve with butter, lemon juice or wine vinegar.
