The glory of Atlantic salmon is on display with this unique stuffed salmon roast. The fresh salmon is folded around a delicious spinach and goat cheese stuffing for a unique and elegant dinner. Rich and satisfying enough to star as the center of an upscale dinner, yet healthy enough to serve every day. Each stuffed salmon roast is two pounds total and serves 6-8.

Puncture bag and thaw under refrigeration before cooking.
Preheat oven to 375°F. Remove roast from bag and carefully cut off twine. Place in roasting pan or casserole dish and brush lightly with melted butter or vegetable oil and lemon juice. Cover roast loosely with foil and cook for 40 minutes. Carefully remove foil and cook an additional 10-15 minutes or until internal temperature reaches 165°F. Let stand 2 minutes before serving.
