Kendall Brook is the right combo of saltiness with slight smokiness that I want with my bagel and creamcheese. I do not like scottish salmon, finding it too dry and smoky....Kendall Brook is moist and salty. Yum. Terrific cooked with eggs or in a casserole too, as it holds up in texture and has enough flavor to last out an hour in the oven.,
