An incredible find. These California sturgeon are farm-raised in fresh artesian well water using ecologically sound methods. The smoky brown gems that are produced sparkle with freshness and integrity, and have an amazingly consistent quality. The flavor is buttery and smooth, with hints of a sea breeze and a velvety feel on the tongue. A worthy advesary to the imports, and definitely the king of American caviars.
