The richness of lamb makes for a magnificent centerpiece to any dinner, and this may be the best yet. Premium leg of lamb is deboned and butterflied, then stuffed with an intoxicating mix of spinach, red peppers, mushrooms, and feta cheese. Creamy and aromatic, the stuffing is a superb match for the subtle gaminess of the lamb. Simply roast, slice and serve. Approximately 7 lbs., serves 8-10.

Instructions based on fully thawed product. Thaw under refrigeration for 2-3 days.
Pre-Heat oven to 400°F. Remove lamb from package. Place in roasting pan and bake in oven for 45-60 minutes for medium rare (internal temperature of 145°F).

Let rest for 15 minutes before slicing and serving (don't forget that the meat will continue to cook once removed from the oven as it rests). Times will vary if cooking more than one Item in oven at a time. We recommend closely monitoring meat temperature with a meat thermometer.
