Nothing says elegance like a crown roast, and this roast is sure to impress. The succulent grain-fed pork, rich and meaty, is all prepped, tied, and ready for roasting. With a delicious apple-sage stuffing in the center, full of fall flavors, this is a grand centerpiece to any meal. Simple to carve and serve, it's sure to get rave reviews. An entree fit for a king. Roast: Completely defrost before cooking (48 hours in refrigerator). Season the roast with salt and pepper, place a small piece of tin foil as a cap over the tip of each of the bones. Place in a roasting pan on a rack in a 400 degree preheated oven for 30 minutes. After 30 minutes at 400, reduce temperature to 325 degrees and cook for additional 1.5 hours. Add thawed stuffing to center of roast, cook an additional 1/2 - 1 hours or until internal temperature reaches 140-145 degrees. Oven temperature may vary. Total cook time is 2.5-3 hours. After cooking remove the roast from the oven and allow it to rest at least 10 minutes before slicing. Slice the roast between the ribs allowing approximately 1-2 ribs per person.
