Preparation
Culinary Torch: Sprinkle about 1 tablespoon of Turbinado sugar (a popular brand is Sugar in the Raw or brown sugar works) over creme brulee while still frozen. Tilt the ramekin and rotate so the sugar covers the entire surface and is lightly coated. Use a culinary torch to caramelize the sugar. Burn the sugar until it turns golden brown. Let the torched creme brulee rest for 10-20 minutes before serving.

Oven Method: Heat oven broiler on High and place on rack as close to broiler as possible. Follow directions for sprinkling sugar, then place under broiler for 2-5 minutes or until sugar melts and turns golden brown. Refrigerate for at least 45 minutes prior to serving.
