Baked Polenta

An elegant alternative to potatoes, baked polenta is refined and delicious. The polenta (course stone-ground corn) is slow-cooked with finely diced carrots and zucchini and sliced into batons for an artful presentation. Simply bake and serve, they are crispy on the outside and unbelievably creamy on the inside. Twelve 2.8 oz. batons total, serves 6-8.

Cook from frozen. Preheat Oven to 350°F. Remove plastic film and place on greased baking tray. Bake 18 minutes or until heated through.
